Collins English Dictionary defines "fable" as: "a short moral story, esp one with animals as characters"...
I think that's a good starting point but I also feel it's important for children to enjoy the experience of reading.
That way you're far more likely to want to do more of it.

That's why I've only included stories I personally enjoy in this book...
The individual stories of Benjy Bear, Snappy Turtle, Fuzzy Dog and Derek Deer each demonstrate a characteristic we would all do well to emulate...
But they're also FUN to read - with parent or on your own.

I think that's important.
