This cookbook is the result of my laziness as a chef and my inability to time my appetizers, entrees, and desserts using an oven for all of them. The first time I made a no-bake cheesecake was when I had my family over for the holidays. I couldn't figure out how my roast chicken was going to stay moist when I had to lower the heat and stick a cheesecake in the oven. I then found a no-bake cherry cheesecake I could make ahead of time easily without added stress. I prefer this method as I think most people do because it saves space when you are trying to cook a large meal, and you could even make it the day before and not worry about freshness. Try some of these recipes for your gatherings and parties and see how little effort a no-bake cheesecake needs.
